I first had okonomiyaki over Covid lockdown when a local (primarily vegetarian) restaurant was running a weekly pre-order pickup special. It's perfect. I like your take on it with an herby salad on top. You really can't go wrong topping every dish with a bit of green.

This was DELIGHTFUL, Emily! I'm going to see if my local library has a copy. You've inspired me to not buy new :) Also, can this batter be made ahead of time and stored in the fridge a day or two before or will that ruin the consistency of the batter?

Swath, sorry I missed this! With this recipe you're sort of making a batter on the fly, mixed in with the veg. But it can totally be made in advance, refrigerated and then sauteed when you're ready to cook!
